I did pretty much the same as stated above when the finish on my G26 barrel started looking pretty rough. no sand paper though. cotton, vinegar for several hours, then a scotch pad, then light polish compound and a couple of hours of rubbing/buffing.

They look great but something bothers me about unprotected steel. Not completely rational, I know, as most who would bother to strip the bluing on their own will also be likely to check for rust and maintain better than the average bear. But still, needs nickel or chrome like that...
I can't speak to every manufacturer's steel but the tenifer treatment on the Glock barrel and slides is in the surface of the steel. you'd need to remove a noticeable amount of metal to get rid of tenifer. and removing a black coating from a stainless barrel does little if anything to the corrosion resistance of stainless steel since many stainless guns have no coating at all. I've never polished regular blued steel before and would be reluctant to do it for the reason you stated.
I polished my Glock barrel a long time ago and carry it about every day so it's seen it's share of sweat and condensation and it has zero corrosion.
It is purely cosmetic, unless you're polishing the feed ramp, then it is mechanical.
A few of my guns I try to pretty up a bit, but my LCP gets used more like an adjustable wrench. When in doubt grab; adjustable wrench, duct tape, hammer, screwdriver, bailing wire, and LCP. None of those are prettied up. To each his own though.
I am enlightened and cultured too. When I drink my beer from a can I stick out my little finger.
